Chicken Enchiladas

Well, for my first recipe entry I only see it fitting to put in my family's favorite...chicken enchiladas. So, hope you try and enjoy as much as our family.

2-3 boneless chicken breast cubed
1 small onion chopped
2 Tbs. Olive oil
1 Tbs. Chili Powder
1 Tbs. Cumin
1 Tbs. Paprika
3-5 squirts hot sauce
½ cup water
Salt/pepper to taste
4-5 burrito size flour tortillas
1 ( 4oz) can chopped green chilies
½ cup sour cream
1 ½ cups shredded Monterey Jack Cheese
1 can Old El Paso Green Chili Enchilada sauce
In skillet, brown chicken and onion in olive oil. Once the chicken in browned, add  in spices, water, and hot sauce. Mix and simmer until water is almost absorbed.
In a bowl, mix chicken, green chilies, sour cream, and ½ cup cheese.
Spread chicken mixture on flour tortilla (eye ball it). Fold in ends and roll up like a burrito.  Place in greased casserole dish. Repeat step until you have 4-6 enchiladas. Pour Green Chili Enchilada sauce on top. Top with cheese. Bake at 350 degrees for 15-20 minutes until cheese is melted and heated through.
