I don’t know about you, but I LOVE rice pilaf. Of course I grew up on the boxed stuff made by Rice-a-Roni…you know “the San Francisco Treat”…haha, just had to throw that in there.
Anyway, after looking at all the additives and hidden ingredients in the boxed stuff, I knew there had to be a better and healthier way to make rice pilaf. So, I started doing some searching and came across this recipe. We love it!!! It’s so easy and good and tastes even better than that San Francisco treat!
Next time you’re looking for a good side dish, try this.
Rice Pilaf
2 Tbsp. butter or olive oil
1/2 cup orzo pasta
1/2 cup diced onion
1 tsp. minced garlic
1/2 cup uncooked white rice
2 cups chicken broth
In a large skillet melt butter {or heat olive oil} over medium-low heat. Cook orzo pasta stirring frequently until it is golden brown.
Stir in onion and cook until onion becomes translucent.
Add garlic and cook for 1 minute.
Mix in the rice and chicken broth.
Increase heat to high and bring to a boil.
Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid is absorbed…20-25 minutes.
Remove from heat and let stand for a few minutes. Fluff with fork and enjoy!!!
