Cheeseburger Soup

This is one of our favorites when it's cold outside.

1 pound ground beef (could use ground turkey)
3/4 cup chopped onion
3/4 cup shredded carrots
1 tsp. dried basil
1 tsp. dried parsley
3 Tbsp. butter, divided
3 cups chicken broth
4 cups peeled and diced potatoes
1/4 cup flour
12 oz Velveeta cheese cubed
1 1/2 cups milk
3/4 tsp salt
1/2 tsp. pepper
1/4 cup sour cream

1. Brown beef in olive oil, drain, and set aside. In same saucepan, saute onions, carrots, basil, and parsley in 1 Tbs. olive oil until tender.

2. Add broth, potatoes, and beef. Bring to a boil. Reduce heat, cover, and simmer 12 minutes or until potatoes are tender.

3. Meanwhile in small pan, melt butter and add flour. Cook for 3 minutes on low until bubbly. Add to soup and bring to a boil. Stir for 2 more minutes. Reduce heat to low.

4. Add cheese, milk, salt, and pepper. Cook until cheese is melted. Remove from heat and stir in sour cream.

Enjoy! I like to serve with warm Beer Bread.
